Four oranges, a thumb of ginger and enough cayenne to make you sit up straight.
Solar was the first thing we ever pressed, and it is still the bottle that leaves the fridge fastest. The carrots come from a single field in the Betuwe because the sugar curve there is flatter than anything we can buy in the city — it means we can push the ginger further without the whole thing tipping into candy.
Nothing in it is heated. The press holds the pulp at two tonnes for ninety seconds, the juice runs cold into glass, and the bottle is capped before it has much chance to meet oxygen. That is the entire process, and it is why it costs what it costs.
Late-season Valencia, brought in twice a week. Pressed with a strip of the peel left on, which is where the bitterness in the finish comes from.
One field, one variety, harvested small. Carrot is why the colour reads orange rather than yellow, and why the drink has any body at all.
Ginger goes in whole and unpeeled. The cayenne is measured in grains, not grams — it should arrive after you swallow, not before.
