Grapefruit that bites back, pulled straight by lime and softened with dragonfruit.
Neon is the one people order because of the colour and come back for because of the bitterness. Ruby grapefruit carries a tannic edge that most juice bars quietly sweeten away; we leave it in and let the dragonfruit do the rounding off instead.
It is also the hardest bottle to keep consistent. Grapefruit swings by a full degree of Brix between crates, so the lime is weighed against every batch rather than measured by recipe. If a bottle tastes flat to you, tell us the date on the cap — we will know which press it came from.
What is inside
Two suppliers, both Sicilian, alternating by week so we always have the fruit at the right point rather than the convenient one.
Pink-fleshed, blitzed rather than pressed. It adds almost no flavour and all of the texture.
A pinch of salt at the end. It does not make the drink salty; it makes the bitterness legible.
