/ the drink
Ninety-two per cent water, already structured by the melon. Drunk faster than it is poured.
Pulse exists because summer in the city is unbearable and nobody wants a heavy drink at three in the afternoon. It is the lightest thing we make and the only one we bottle at 330 ml, because 250 disappears before you have sat down.
Watermelon oxidises fast — faster than citrus, faster than anything else on the shelf. This is the bottle where our twelve-hour rule stops being marketing and starts being the whole point.
Seeded varieties only. Seedless melons press sweeter and thinner, and the drink ends up tasting like a sports drink.
Peeled, because the skin turns the whole bottle green within an hour.
Mint is bruised, never blended. Blending it releases chlorophyll and the colour goes muddy.
