(Vine to glass)
Six steps
Grape, wine, still, cask, blend, glass. The law sets the rules; time does the work.

01September
The vine
Ugni blanc on chalk soils of the Grande Champagne. Thin, acidic wine — perfect for distilling.

02October
The harvest
Picked in early October, pressed the same day, fermented without sugar or sulphur.

03Winter
The still
Twice distilled in copper alembics charentais, by law before 31 March.

042 – 60 years
The cask
Into 350-litre Limousin oak casks, toasted by our own cooper.

05Spring
The blend
The cellar master blends up to forty eaux-de-vie from different years and villages.

06Today
The glass
Reduced slowly with distilled water to 40%, then bottled by hand.
