Cayenne is a texture, not a flavour

The most common note we get about Solar is that it is spicy. It is not, particularly. What people are describing is where the heat arrives, not how much of it there is.

Capsaicin is slow. Put it in a cold drink and it lands after you swallow, in the throat rather than on the tongue — which reads as body, warmth, length. Sweetness and acidity land immediately, at the front. Space them right and a thin juice feels like a thick one.

Grams, not pinches

Weighing the last three per cent. It is the part of the recipe that changes most often.

We measure cayenne to a hundredth of a gram per litre, because the difference between interesting and unpleasant is about four hundredths. A pinch, in a bar, is a range of roughly ten times that.

If you want to try it at home: less than you think, added at the end, and give it a minute in the cold before you judge it.
