/ the drink
Almost transparent, faintly floral — the bottle we hand to people who say they do not like juice.
Glass is a deliberately quiet drink. It was built for the last hour of a dinner service, when nobody wants another sweet thing but everyone wants something in the glass that is not water.
It is the only bottle we filter, and only once, through a coarse cloth. Anything finer and it stops tasting of cucumber and starts tasting of nothing.
Skin on for this one. Glass is meant to taste green even though it barely looks it.
Ripe to the point of being a nuisance to handle. Under-ripe pear makes the drink gritty.
Yuzu juice, not zest. Elderflower cordial we make ourselves, once a year, in June.
